Abstract: | Fundamental endeavor of foods is coiling around nurturing of nutrition, providing mental wellbeing, improving health, prevention of disease and its recurrence, hunger satisfaction and combating starvation. The established aim of foods, being vertically elevated with special reference to functionality, exploring next level aspirations through sincere efforts of food scientists till to date has rightly provided thrust area option for said research project (Tripathi and Giri, 2014). Functional food commercialization, governed by technology driven sustainable production and consumer trend base market research has rightly projected by national and global scenario with special reference to probiotic foods (60-70%) against gross production. Probiotic foods recently emerging out as beverages, dietary supplements and animal feeds are compensating with consumer demand base trends and also justifying the statement of Hippocrates Let food be thy medicine and medicine be thy food to satisfy the aspirations of preventing non-communicable diseases and their recurrence too. In year 2016, the market of probiotic foods (USD 48.38 billion) was rightly estimated to expand from 5.92% to the tune of 6.9% by the end of year 2018 CGAR and was observed to be self-explanatory for exponential phenomenal industrial production (Grand View Research, 2019). Moreover, U.S. commercial production of probiotics with special reference to regional rise up of 31.6% (Figure 1 and 2) of the global total market (2018) recorded the milestone to boost up national production under the thrust area research domain of new generation vision. newline |
