dc.description.abstractDiabetes mellitus is a serious metabolic disease and its prevalence is increasing globally. Asian Indians are at higher risk for type 2 diabetes and other metabolic abnormalities. Hence, there is need to develop value added product with the combination of the Bael (Wood Apple), amla (Emblica officinalis) and Stevia rebaudiana by having one or more nutrients that compliments each other by keeping in view the various health and nutritional benefits. newlineIn this study, firstly animal experiment was conducted to evaluate the dose of Herbal extract. secondly, five value added products were developed with the incorporation of experimented herbal dose. Further sensory evaluation and physio chemical properties were assessed on different parameters. Lastly, Information was gathered via online survey. The result showed that STZ administration to HFD-STZ group showed the hyperglycemic condition and lower body weight in comparison to control. Food and water intake was found significantly high in STZ treated animals and low in treatment group. Metformin significantly restored all abnormalities which were induced by the STZ injections. However, combination-3 was found more effective, their results are more close to the metformin treatment to diabetic animals. In Value added food products, cookies, squash, chutney, masala and salad dressing were developed and highly evaluated by panel as compared to control. Therefore, the combination of goose berry, bael and stevia could be developed in to a novel and effective therapy against diabetes. Hence, the results of this study indicate that a combination of herbal products is an approachable therapy to treat diabetes. newline newline
