Abstract: This work aimed to isolate and characterize bio molecules especially protein and lipid from Indian major carp Labeo rohita skin and to utilize them for food product development. The investigation carried out is presented in five chapters. CHAPTER 1: GENERAL INTRODUCTION The Fish processing industry generates a large amount of waste. About 70% of fish processed, results in the production of 20-80% of fish waste depending on the type of fish being processed. The problem with the fishery wastes has evolved in recent years due to the global concern as this waste affects the eco system if not discarded properly. Dumping of waste material results in the loss of large number of bioactive materials and leads to pollution. Utilization of these by-products can be a solid waste management strategy. Previously mainly animal feed was produced from fishery waste. In spite of that, fish waste can be used for the production of bioactive compounds like proteins and oils which are rich in Polyunsaturated Fatty Acids (PUFAs), especially eicosapentaenoic acid (EPA) and docosahexsaenoic acid (DHA) and Collagen. In this present study, an attempt was made to utilize the skin of Labeo rohita that wasdiscarded during fish selling for the production of fish skin oil and collagen and also uses them to formulate value-added food products by ascertaining their physicochemical,antioxidative, antimicrobial properties. CHAPTER 2: PROCESS DEVELOPMENT FOR ISOLATION OF PROTEIN AND LIPIDS FROM WASTE FISH SKIN newlineCHAPTER 2 A: ISOLATION OF PROTEINS FROM FISH SKIN Fish skin that is discarded as a waste, can be used for the production of collagen. Hence, an attempt was made to isolate the protein from waste Labeo rohita fish skin by salting out method. The protein extracted was 24.50 ± 0.03%. CHAPTER 2B: ISOLATION OF LIPID FROM FISH SKIN Generally, about 50% of the body weight is generated as waste during fish processing.
