dc.description.abstractMicrowave processing of materials has found its significance in the newlinerecent years in most of the industrial processes and also in domestic food newlineprocesses Microwave heating is more advantageous than conventional newlineheating as it has quick start up periods and ability to heat materials uniformly newlineEggs are consumed either directly or indirectly by people of all age groups newlinedue to their rich nutritive value and the consumption rate is 30 per cent of newlineoverall food quantity consumed worldwide Hence microwave heating of egg newlinehas invoked research interest But it was found that egg explodes when it is newlineexposed to microwave irradiation Hence it was decided to find solution to newlinecook eggs in domestic microwave ovens without explosions newlineOn the other hand eggs are potential hosts and carriers of newlinepathogenic microbes like Salmonella enteritidis and avian flu viruses Heat newlinepasteurization is the best solution for controlling these pathogens but newlineoverheating caused by conventional means of heating affects the egg s vital newlinenatural properties due to protein denaturation Therefore a heat source which newlinecan heat foods from inside out will be a better alternative to solve this newlineproblem Microwave heats materials subjected to its irradiation from inside newlineand hence microwave heating was considered for in shell egg pasteurization newline newlineen_US
