Abstract: Milk, a fluid composed of various nutrients like fat, proteins, Carbohydrate, vitamins and minerals. Composition of milk varies from species to species as per requirement of their offspring. Apart from the requirements of new born, milk also provides nutrition to elderly people. newlineSweetmeats are extensively used chiefly along with other foods due to their good flavor and high food value. They are also easily digested. Sandesh is a channa based sweetmeat, it is very vital to health because of its fairly high protein and fat content, minerals specially calcium and phosphorous and also fat soluble vitamins specially vitamin A and D content. Not only in our country but also in this subcontinent, the importance of sweetmeat has been recognized since five thousand years ago. newlineChanna refers to the milk solids obtained by the acid coagulation of boiled hot whole milk and subsequent drainage of whey. It is an indigenous milk product of Indian origin which is being produced throughout the year in the country on large scale and serves as base material for a large variety of Indian sweetmeats like Rasogolla, Sandesh, Chum-Chum, Channa Murki, Channa Podo, Rasomalai, Khorma/belgrami, etc. Pattern of milk consumption in India indicates that about 6 % milk is converted in to channa. newlineSandesh is a very popular and channa based sweet of eastern India. There is a custom prevailing in West Bengal that whenever good message (sandesh) is sent to relatives and friends, Abstract at least one sweet of equisite quantity should accompany the messenger. Sandesh is the common sweet carried by the visitors at such occasions. The sweet besides being palatable is also a rich source of milk proteins, fat and fat soluble vitamins like A,D,E and K. Sandesh is usually prepared from cow s milk because it produces soft body with fine and uniform grains size product which are considered defects in soft grade channa. newlineChanna Murki is sugar coated dessert, conventionally prepared from channa / paneer has a compact, close knit body and texture.
