Abstract: newline newlineThe agricultural and food processing industries produced large volumes of wastes annually worldwide which causes serious environmental and disposal problems. Those agro-industrial by-products can be effectively used as a renewable resource in the production of water-soluble polysaccharides. The extraction of water soluble polysaccharides from newlineTamarindus indica and Pithecellobium dulce seeds were carried out by hot water method and optimization were done by three level three factor Central Composite Design Response Surface Methodology which results in high yield of T.indica seed polysaccharides. The phytochemical study has proved the purity of water soluble polysaccharides from T.indica and P.dulce seeds. The physicochemical and micrometric properties revealed that the isolated polysaccharides might be used as a potential food additive. The instrumental analysis of water soluble polysaccharides from T.indica and P.dulce seeds were done to predict their characteristics. The isolated polysaccharides were subjected to Fourier Transform Infrared Spectroscopy (FT-IR), Liquid Chromatography-Mass Spectrometry (LC-MS) for its compositional analysis and exhibited that both the isolates are heteropolysaccharides. The LC-MS analysis confirmed that the T.indica seed polysaccharide is composed of glucose, galactose, mannose and xylose whereas the P.dulce seed polysaccharide is composed of glucose, galactose, mannose, xylose, fucose newlineand rhamnose. The thermogravimetric analysis showed that the isolated polysaccharides were thermally stable. The Scanning Electron Microscopy and X-Ray Diffraction depicted the morphological characteristics. newline newline
