Abstract: newline In the present investigation entitled Study on the biochemical profile of different Vigna spp. prevalent under mid-hill conditions of Himachal Pradesh , the dried mature seeds of five Vigna species viz. Vigna umbellata (BRS-2), Vigna unguiculata (LOBIA-1), Vigna radiata (SUKATI-1), Vigna angularis (HPU-51) and Vigna mungo (HIM-MASH) were procured from Crop Improvement Department, College of Agriculture, CSK Himachal Pradesh Krishi Vishvavidyalaya, Palampur. The biochemical constituents of five Vigna species were determined by using standard procedures. Significant variations were observed in the proximate composition of five Vigna species viz. moisture content (8.85-12.17 per cent), crude protein content (20.48-24.45 per cent), fat content (0.44-1.78 per cent), crude fiber content (4.02-5.44 per cent), ash content (3.10-3.87 per cent) and carbohydrate content (54.97-59.09 per cent). The total soluble protein, total sugar, starch, lysine, methionine, tryptophan, in vitro protein digestibility and ascorbic acid varied from 19.59-23.17 per cent, 5.35-8.06 per cent, 42.86-48.63 per cent, 5.37-6.74 g/16gN, 0.95-1.46 g/16gN, 0.63-1.18 g/16gN, 59.65-83.69 per cent and 0.54-0.95 mg/100g, respectively. Significant variations were observed in mineral contents viz. zinc (2.41-3.93 mg/100g), iron (6.31-8.77 mg/100g), calcium (218.00-402.33 mg/100g), manganese (1.50-2.87 mg/100g), potassium (1953.33-2816.67 mg/100g), phosphorous (213.46-333.03 mg/100g), magnesium (120.33-236.33 mg/100g) and sodium (16.67-38.67 mg/100g) contents of Vigna species. Anti-nutritional components viz. total phenols (549.56-1126.07 mg/100g), simple phenols (155.17-573.32 mg/100g), total tannins (394.32-687.98 mg/100g), condensed tannin (33.29-89.11 mg/100g), hydrolysed tannin (305.22-645.67 mg/100g), flavonoid (236.11-557.41 and#956;gCE/100g), saponin (1.09-2.90 per cent), phytic acid (473.30-645.40 mg/100g), trypsin inhibitor content (21.80-32.46 mg/g) and and#945; amylase inhibitor content (614.33-1560.67 unit/g), revealed significant variations
