Abstract: | Pacific white shrimp (Litopenaeus vannamei) is the predominant farm cultured shrimp and consumed throughout the world on account of their delicacy and nutritional benefits. Shrimp have more amount of proteins, polyunsaturated fatty acids and antioxidants like astaxanthin, selenium and hemocyanin, which helps in the reduction of cardiovascular disease and oxidative stress. The shelf life of pacific white shrimp is one day at ambient torage temperature and 3 to 4 days under refrigerated storage condition. The presence of non-protein nitrogen compounds that entices microbial invasion and autolytic enzymes are responsible for short shelf life. The main aim of this research work is to subject the pacific white shrimp to three different hurdles such as Modified Atmospheric Packaging (MAP), natural extracts from fruit seed and peels, blue LED illumination individually and also in combination for shelf life enhancement and prolonged storage of L. vannamei. The impact of different package atmosphere on shelf life extension of L. vannamei stored at 4°C for 15 days and 15°C for 6 days were investigated. Shelf life was evaluated in terms of physical parameters such as whiteness (W), texture, weight loss % (WL%), biochemical parameters such s pH, trimethylamine (TMA) analysis, TBARS analysis, hypoxanthine content (Hx), and Microbiological quality indicators such as total plate count (TPC), psychrotrophic bacterial count (PBC) and anaerobic bacterial count (AnC). The package headspace gas analysis was evaluated for MAP packaged samples. newline |
