Abstract: | At present, due to deficiency of nutrients, the diseases such as diabetes, obesity, cancer, heart attack etc. increasing day by day and millions of people have died in young age. Due to the busy schedule of lifestyle, peoples are generally preferred to eat fast food. The deficiency of minerals and vitamin in human diet can also lead to problem in glucose metabolism. Therefore, to overcome all these problems researchers are focusing on, how to minimize or replace the fatty contents in consumer diet with nutrient rich diet. The food, pharmaceutical, and agrochemical industries are working to deliver bioactive nutraceuticals components (vitamins, antioxidants and antimicrobials), within food products. In this work, an attempt has been made to develop biocompatible o/w NEm for the delivery of antioxidant and anticancer nutraceuticals such as curcumin, resveratrol, quercetin, quinine, and benzylisothiocynate. To achieve aim, natural oils such as corn oil, lemon oil, medium chain triglyceride and ethyl oleate was utilized. The toxicity of nanoemulsion was reduced by using non toxic, biocompatible hydrophilic surfactants such as D -and#945;-Tocopherol polyethylene glycol 1000 succinate, saponin, decyl beta- D-Glucopyronoside, and lecithin have been used.
