Abstract: | Chitooligosaccarides (COS) are the depolymerized products obtained from newlinechitosan by chemical or enzymatic method. COS has been found to be more potent newlinethan chitosan in terms of anti-bacterial, anti-fungal, antioxidant, anti newlineinflammatory, anti-tumor, anti-metastatic, anti- angiogenic activity. In this study, newlineChitosanase enzyme has been produced from Bacillus sp Kamtuty10 and newlineemployed to produce COS from chitosan.. COS production has been found to be newlinemaximum at pH 6 and the temperature of 50º C using free chitosanase. Among the newlinemedia components, starch and ammonium sulfate were detected to increase the newlinechitosanase production and identified as the best carbon and nitrogen source newlinerespectively. Chitosanase was successfully immobilized using alginate. COS newlineproduction was also optimized using immobilized chitosanase. Immobilized newlinechitosanase beads were successfully reused upto 3 times for COS production. COS newlineproduced by enzymatic method have shown excellent Total antioxidant activity, newlineProtein denaturation inhibition activity, Membrane stabilization activity and Nitric newlineoxide scavenging activity. A novel drug delivery method in the form of newlineorodispersible films has been developed using gelatin, COS and Moringa oleifera newlinebioactives.
