Abstract: | The study in theory considered that as, there is the growing consciousness towards being healthy and controlling of life style diseases thus the clients of 5 star hotels in New Delhi are seeking sugar free products when they dine out. Thus to fulfil this need of customers, management of 5 star hotels have generated various strategies and policies in terms of procuring, processing and selling of sugar free products, and thus these needs tend to have an impact on the hotels. New Delhi, the capital of India is a multicultural, multilingual metropolitan with a population which is diverse, well-travelled, foodie, health conscious and always keen to experience new trends in food and beverages. The involvement and knowledge of the consumers regarding healthy nutritious food products in New Delhi is latest and always up to date, thus making New Delhi to be perfect research area for the study of sugar free products. The focal drive of this research is to comprehend the consumption pattern regarding sugar free products of the capital s population in 5 star hotels. The research pursues to recognize the demand and popularity of the sugar free products and subsequently how they influence the various functional core areas namely kitchens, restaurants, purchase and what impact they have on the guest expectations, satisfaction and the revenue of the food and beverage department. Various studies have been conducted regarding the consumer behaviour and intentions of sugar free products, regarding processed proprietary sugar free products but not when it comes to people seeking sugar free products when they eat out in star hotel restaurants. Also the popularity of sugar free products has been studied with diabetic people but not with healthy people seeking to maintain health and weight. Thus the intent of this research is to add to the literature of sugar free products with reference to healthy population indulging in eating out in restaurants of 5 star hotels. |
